Maple-Ginger Cider Switchel

Maple-Ginger Cider Switchel

Stir well before each serving. It’s natural for the ginger to settle to the bottom.

  • 1 5"-piece fresh ginger (about 6 ounces)
  • ½ cup apple cider vinegar
  • 3 tablespoons pure maple syrup
  • 1 tablespoon fresh lime or lemon juice
  • 4 cups water or club soda
  • Mint sprigs (for serving)

Recipe Preparation

  • Pass ginger through a juicer (you should have about ⅓ cup). Combine ginger juice, vinegar, maple syrup, and lime juice in a large pitcher and stir until maple syrup is dissolved. Chill until cold.

  • To serve, dilute with water and pour switchel into ice-filled glasses; garnish with mint.

  • Do Ahead: Base can be made 1 day ahead. Keep chilled.

Reviews SectionI love this but I have made a few changes. I use a 1-2" piece of fresh ginger, chopped small. 1/3 cup would be too strong for me, as I do not dilute it. I use just plain old water from the tap. I also add 4-5 fresh basil leaves, chopped. I keep a small pitcher in the fridge at all times. I drink about 4-6 oz. first thing in the morning as my coffee brews. A pitcher lasts me about one week. This is good for your gut! Enjoy! How long will this keep in the refrigerator?AnonymousCarmel, CA06/25/18Instead of juicing the ginger, I will chop the ginger roughly, put it in thee blender with all the liquid ingredients, and then strain it.AnonymousCrofton, MD06/14/18Excellent when used as a form of punishment, I bet that little SOB wont use spray paint in the garage again!AnonymousUnited States01/05/18is there a way to make without juicing ginger
